This Egyptian classic arrives on your table without the worry. We've kept what makes it sing—the layers, the spice, the soul—while respecting what your kidneys need.

What you need and how to make it

Ingredients (4 small servings)

  • ½ cup dry lisan asfur (orzo pasta)
  • 3 oz skinless chicken breast (very small piece, finely diced)
  • 1 tbsp olive oil
  • 2 tbsp finely minced onion
  • 1 tbsp very finely diced carrot (optional, small amount only)
  • 3½ cups water (or homemade no-salt chicken broth)
  • ¼ tsp turmeric
  • ¼ tsp black pepper
  • Pinch ground coriander
  • Small squeeze fresh lemon (added at serving)
  • Fresh parsley for garnish (small amount)

Lisan asfour soup is a classic Egyptian comfort dish named after its tiny “bird’s tongue” pasta. Popular at family meals and during Ramadan, it’s traditionally made with chicken broth and gentle spices for a light, soothing soup.

Instructions

  1. Sauté aromatics
Heat olive oil in a pot. Add onion and cook until soft (do not brown). Add diced chicken and cook until just opaque.
  2. Add spices
Stir in turmeric, pepper, and coriander.
  3. Add liquid
Pour in water or homemade no-salt broth. Bring to a gentle simmer.
  4. Add orzo
Stir in lisan asfur and cook 8–10 minutes until tender.
  5. Adjust consistency
If soup thickens too much, add small amounts of hot water (remember fluid limits).
  6. Finish
Add lemon and a tiny sprinkle of parsley before serving.
